Sweet Potato Fries!

We have our traditional grilled hamburgers for our 4th July Celebration. This year, I am making Sweet Potato Fries as one of our sides.....Can I say YUM!! Your Bosch Slicer/Shredder Attachment will make this side dish a breeze!


Sweet Potato Fries
4 large sweet potatoes peeled
1/2 cup olive oil
Peel the sweet potato and feed it into the Bosch Slicer/Shredder with the French Fry Disk.



In seconds, my fries were cut! Coat the raw sweet potato fries in olive oil. Spread over stainless steel jelly roll pan. Bake 400 degrees for 15 to 20 minutes or until tender. If you like them crispy, bake longer!


Note from Paula:
The smaller OR bigger your crowd is how many sweet potatoes to prepare. I usually make about 4 to 5 sweet potatoes for our family. They eat them all!

Cranberry Relish Made Easy

Our Family Cranberry Relish!
1 pack (4 cups) fresh cranberry
2 medium oranges w/ rind*

Generous 1 1/2 pecans

Step One:
Process all ingredients till coarse.

Step Two:
Add 2 cups raw sugar or to taste and mix well. Chill OR Freeze!

*Be sure not to use the seeds nor the center of the orange.

If you notice, I used the Bosch Universal Mixer meat grinder to make the cranberry relish! In case you are wondering, the Bosch meat grinder has multiple uses from processing your own meat, making nutbutters to making your holiday relish. I love my Bosch and all the accessories that make it the complete kitchen center.

This recipe though common and probably everyone's family recipe but it brings fond memories of my grandmother. She always had this delicious cranberry relish gracing our Thanksgiving table and following Christmas dinner.

Caramelized Butternut Squash

I have always wanted to use butternut squash as a side dish.  However, my kids seem to have an aversion toward squash in general.  I keep trying to introduce it to them.  They are good troopers to try one helping but then plead with me not to make the squash recipe again.  This time they begrudgingly told me they liked the butternut squash.  Hurray!  I can finally have a fall type vegetable with our meals.  This recipe is a keeper and will grace our table often this winter....and Thanksgiving!  Those lucky kids.

Onto the recipe....

Caramelized Butternut Squash
2 medium butternut squash (about 4-5#)
6-8 Tbl butter 
1/4 cup Xagave (you could use 1/4 cup brown sugar)
1 1/2 tsp salt
1/2 tsp pepper

Step One:
Cut off ends and peel butternut squash.  Scoop out the seeds and cube the squash into 1/4" to 1/2" cubes.


Step Two:
Melt butter and mix in Xagave, salt and pepper.  Toss the liquid mixture over the butternut squash cubes.


Step Three:
Roast 45-55 minutes or until tender.  Turn squash with spatula 2-3 times during the roasting/baking process to get the ingredients well covered over the butternut squash.



Step Four:
Eat and enjoy

I like this recipe because the caramelizing makes the squash taste like a buttered sweet potato, but I am getting the squash in our diet.

Baked French Fries

I love French fries and I love my Bosch Slicer/shredder attachment which makes them so fast and easy.  I don't really like frying foods and the baked French fries circumvent that for me.








Step One:
Feed the whole potatoes into the Bosch Slicer/Shredder with the French Fry disk.  The potato will feed itself through the disk and make wonderful French fry slice potatoes in seconds.



Step Two:
In large mixing bowl, place the raw potatoes, salt, pepper, garlic powder, and olive oil.  I toss the potatoes thoroughly to make sure the oil and other ingredients have coated the potatoes.



Note from Paula: I don't have the exact amount of salt, pepper, garlic and olive oil as it is in proportion to the amount of potatoes you are fixing.  In my case, I cooked  about 12 large potatoes so I used about 2 tsp salt, 1 tsp pepper, 1 tsp garlic powder and 1/2 cup olive oil.  This is a guess of amounts as I simply sprinkled all the ingredients over the raw potatoes.  I always add more oil if the potatoes seem on the dry side.

Step Three:
Bake 375 degrees for 45 minutes to 1 hour. OR until tender/browned.

Step Four:
Load your plate and eat away!

Death by Mashpotatoes!

One of the fun things I love about visiting my daughter in law's is that we cook together.  They are even on board in adding to the Paula's Bread blog!  They enjoy sharing with me new recipes and know that they will be blessing the readers at the same time.

This month my sweet daughter in law shared a multitude that I will share with you over the next few weeks.  First, let me tell you about how these mash potatoes are the 'death' of you.  They are laden with wonderful creamy butter and heavy whip cream.  Are you beginning to see why it would be called 'death by mash potatoes?" :)  The problem is that they are soooo good that you can't resist them.  You end up eating several helpings.  I thought I could stop myself but like the rest of my family, I had to have just one more bite.  Several 'one more bites' later the mash potatoes were merely a memory.

Remember, your Bosch Universal Mixer with the gourmet wire whips will make these creamy mash potatoes in minutes.

In case you didn't notice, I am using my 'old bosch...bosch bowl!'  My new Bosch Universal Plus mixer is on the road as we do trade shows.  We keep our 1984 Bosch Mixer on our counter to make all our great creations.  Bosch Mixer is a wonderful stand mixer because they are a mixer to last!!  I am STILL using my original 1984 Bosch Mixer!  I love my Bosch ixer and I know you will too!

Without further a due let me share this wonderful Mash Potato Recipe given to me by my daughter in law.

Death by Mash Potatoes
from Just Joy cookbook
4# yukon golden potatoes*
4 sticks butter cubed
2/3 heavy cream
salt & pepper to taste

Peel potatoes and boil.  It is better to stop cooking potatoes at 'just' done or they will become watery when whipped.  When potatoes are done, pour into a colander and drain for 30 seconds.  Warm the cream slightly.  Put the cooked potatoes and the warm cream into your Bosch Universal Mixer.  Whip at speed one adding the cubed butter; and salt/pepper to taste.  With your Bosch Mixer, you will have these potatoes whipped creamy in about 2 minutes!!  YUM!

Broccoli and Cheese...A great combination!



This is a wonderful side dish that has a little prep but makes a great presentation. My kids really enjoyed the new creation I made. Hope you enjoy it too!







4 heads of broccoli (about 2 packages of 10 oz. frozen broccoli)
2 cans cream of celery *
3 cups shredded cheese
1/4 cup chopped onions
1 tsp Worcestershire sauce
1 cup bread crumbs
3 Tbs. butter

Step One:
Steam broccoli till tender.



Step Two:
Mix cream of celery soup or homemade cream base (see below) with 1/2 tsp celery seed, chopped onions, Worcestershire sauce and 1 1/2 cup shredded cheese. Add to drained steamed broccoli.









Step Three:
Spread in 9x13 pan. Top with bread crumbs and dab butter over the bread crumbs. Bake 350 for 30 minutes. Remove and add rest of shredded cheese. Return to oven for 10 minutes or until golden brown.



Serves 8-10



Cream Sauce
I use this base instead of buying creamed soups. When a recipe calls for cream of celery, cream of mushroom or cream of chicken, I simply make this cream base and add a seasoning. In this case, I used celery seed to give the flavor.

1 stick butter
1/2 cup whole white wheat flour
2 cups milk

Melt butter. Whisk flour into butter. Add milk and stir till thickened. Add flavoring.

Sweet Corn Pudding


Here is a new vegetable to add to your Christmas dinner. My sister-in-law is always trying new recipes at Thanksgiving and this year was no exception. We always have a variety of vegetables to make the complete holiday feast.

Christmas is a time for a traditional dinner as well. Here is a fix ahead wonderful corn vegetable side dish. Wow! That was a mouthful...or sentence full! It was really good and real hit. The best part of this side dish was the prep was done the day before which saves TIME...that is what we are all trying to redeem!

So here's to ease on Christmas dinner. I hope you enjoy.

1 stick butter
1 medium onion chopped (Bosch food processor very handy for this!
2 large garlic cloves minced
36 oz frozen corn kernels (about 9 cups)
1/4 cup whole white wheat flour
1 qt heavy cream
6 Tb uncooked grits
3 Tbs minced chile peppers
9 eggs (beaten)
1 cup freshly grated Parmesan cheese

Step one: Melt butter. Add onion, garlic and cook 3 min. Add corn and cook; stirring for 3-5 min. Add whole wheat flour and stir for 1 minute. Stir in cream.

Note from Paula:Use a wire whip to blend the flour and 1/2 cream. Then pour remaining cream & beaten eggs till all smoothly blended. Then add corn.

Step Two: Continue to stir until mixture comes to a boil about 15 min. Add grits and remove from heat. Stir in chili peppers and salt.

Step Three: Pour mixture into 9x13 baking dish. Sprinkle with cheese. Bake 425 degrees until center puffs and top turns golden brown. 25-30 min.

New Twist to Traditional Green Bean Casserole!


The Thanksgiving dinner is over and one more turkey type dinner to go! My sister in law hosts all the extended family for our traditional dinner. We each have our designated food item to bring...I know you will never guess what I bring! Dinner rolls. More on that later in another post.

What I want to share with you is the twist to the traditional Green Bean casserole that many make for their Turkey dinner. My sweet sister in law used fresh brussels sprouts instead of green beans!

2# or 4 cups fresh brussels sprouts
2 cans cream of chicken soup*
1-2 cups French's fried onion

Simply steam the fresh brussels sprouts till tender. Cut the brussels sprouts in half and mix the brussels sprouts with the cream of chicken soup. Cover with the French fried onion. I say 1-2 cups because our family likes lots of the fried onions BUT your family might not like them and you would then want to only sprinkle them on your veggie.

*Home made cream of chicken soup:
1 stick of butter melted
1 cup whole wheat flour
1/2 cup chicken broth
1 cup half and half

Melt the butter and whisk the flour into the melted butter. Add the liquids. If the cream soup is too runny, add more flour. I like my soup thick to make a good creamy mixture for my veggie topping. You could also substitute the half and half for heavy cream and it will thicken even better but you have lots more calories!

Easy French Fries!



America is known for hamburger and fries as their classic meal. McDonald's ring a bell? :) When you make this classic meal at home, you might think you need to run to the store for frozen fries to cook for this dinner. Wait!! Pull out your Bosch slicer/shredder accessory. With the French fry cutter, you can make perfect French fries with white potatoes OR sweet potatoes. The potatoes are made into perfect fries. I simply fried these potatoes into crispy fries using coconut oil in my frying pan. They are fast and easy to make and soooo much better than any store bought fries. Look out McDonald's competition is coming.

Roasted Cabbage



Wow! Have you ever thought of such a thing? My daughter in law in honor of St. Patrick's Day made a cabbage side dish for us. I have always heard of boiling or stewing cabbage but never roasting. What a treat. The cabbage had a sweet flavor and the olive oil and garlic made for a fantastic vegetable. In fact, you can roast most vegetables for a great flavor.

Ingredients:
One head of cabbage (cut into wedges)
Olive oil
Salt and pepper
garlic powder
lemon pepper

Toss the cabbage wedges in the oil/pepper mixture. Roast on a cookie sheet for 400 degrees for 40-45 minutes.

To make this a beautiful presentation, we used the outside of the cabbage leaf. We added 1 tsp. of pizza/pasta mix per 1 cup of cottage cheese! Then, we used an ice cream scoop to put the cottage cheese mixture and a cabbage wedge in the cabbage leaf. What a beautiful presentation of such a simple veggie!

Note from Paula: If you cut the cabbage wedges thinner, the cabbage center will cook faster. Thicker wedges will take longer making the outside brown too fast. You can cover the cabbage (or other veggies) toward the end of the cooking time to keep it from browning too much. We made larger wedges because we wanted larger pieces for our meal.

Creamy Mash Potatoes

For holiday ease, use your mixer to make your mashed potatoes! I literally have 8-9# of potatoes creamed to perfection in about 2-3 minutes! I boil the skinned potatoes till done. Then, I drain and put the cooked potatoes into the Bosch bowl. Add the following: 1 to 1 1/2 sticks of melted butter, salt and pepper to taste, plus 3/4 to 1 cup of milk directly into the Bosch bowl. Using your gourmet wire whisks, set the Bosch mixer speed to 2. You will have up to 8-9# of fabulous, fluffy whipped potatoes in minutes. One more way your Bosch mixer will help your traditional meal take less time in the kitchen and more time with your family.

Grilled Yams!

Ingredients:

* Yams
* Olive Oil
* Xagave


Steps:
Peel and slice yams (about 1/4" thick)
Brush with olive oil and grill on low heat about 5-8 min. per side
Drizzle with Xagave and serve!
