Broccoli and Cheese...A great combination!



This is a wonderful side dish that has a little prep but makes a great presentation. My kids really enjoyed the new creation I made. Hope you enjoy it too!







4 heads of broccoli (about 2 packages of 10 oz. frozen broccoli)
2 cans cream of celery *
3 cups shredded cheese
1/4 cup chopped onions
1 tsp Worcestershire sauce
1 cup bread crumbs
3 Tbs. butter

Step One:
Steam broccoli till tender.



Step Two:
Mix cream of celery soup or homemade cream base (see below) with 1/2 tsp celery seed, chopped onions, Worcestershire sauce and 1 1/2 cup shredded cheese. Add to drained steamed broccoli.









Step Three:
Spread in 9x13 pan. Top with bread crumbs and dab butter over the bread crumbs. Bake 350 for 30 minutes. Remove and add rest of shredded cheese. Return to oven for 10 minutes or until golden brown.



Serves 8-10



Cream Sauce
I use this base instead of buying creamed soups. When a recipe calls for cream of celery, cream of mushroom or cream of chicken, I simply make this cream base and add a seasoning. In this case, I used celery seed to give the flavor.

1 stick butter
1/2 cup whole white wheat flour
2 cups milk

Melt butter. Whisk flour into butter. Add milk and stir till thickened. Add flavoring.

  1. I love making my own "cream of" soups also. The recipe for cream sauce that you listed above, is that equivalent for one can or two cans of soup? Thanks!

  2. Sorry I didn't reply quickly...it slipped through the cracks. :) The above cream sauce made about 2 1/2 cups of sauce. One can of creamed soup is 1 cup so with this homemade cream soup, you are using a little over 2 cans of cream soup. Enjoy!
