Ezekiel Bread


I never realized that I didn't post on the blog an Ezekiel bread making your own mix! I have written about making Ezekiel bread using a pre-made mix of the dried grains and beans which I use from Walton Feed. I like using a mix of the grains and beans as it is so easy. However, if you don't have the pre-made mix, here is an excellent recipe to make your own home made Ezekiel Bread! Yum.

7 cups hot water
1 cup oil or melted butter
1 cup honey or molasses
1/3 cup pinto bean flour
1/2 cup soybean flour
1/3 cup lentil flour
1 cup rye flour
1 cup barley flour
1/2 cup millet (not milled into flour)
5 cups white spring wheat flour
4 cups red winter wheat flour
2 T salt
2 T dough enhancer
1/2 cup vital wheat
5-6 T SAF yeast
8-10 cups additional white wheat flour

In Bosch bowl, add all the ingredient except last amount of white flour with SAF yeast on top. Pulse until flour is completely moistened. Turn off and let sponge for 15-20 minutes.

Turn Bosch machine back on to speed 1 while adding remain white wheat flour till dough pulls away from the sides. Turn speed to 2 and knead 3-5 minutes.

Divide dough and place in greased stainless steel bread pans. Let rise. Bake 350 degrees fro 30-35 minutes.

Yield: 6 loaves
