Step One: Roll pie dough between wax paper.  Cut into rectangles.

Fast Breakfast Idea!

 CHEESE EGG MUFFINS
 1/2 pound fresh mushrooms (sliced)
4 green onions chopped
1/2 cup butter; plus 1 Tbs butter
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt
10 eggs
4 cups shredded cheddar cheese
2 cups small-curd cottage cheese

Makes 2 dozens.

1. Saute the mushrooms and onion in tablespoon of butter.  Combine the flour, baking powder and salt.  In another bowl combine eggs and cheeses.  Melt remaining butter, add to egg mixture.  Mix in dry ingredients along with mushrooms and onion.

2. Fill greased muffin pan 3/4 full.  Bake 350 degrees for 35-40 minutes or until a knife inserts clean.

Note from Paula: These are great fresh and you can also keep them in the fridge and reheat them for a fast breakfast.  I didn't freeze them, but I think they would freeze.   You could have them available even longer for that high protein fast breakfast.

Ginger Cinnamon Rolls!

Ginger is an ingredient that equates itself with Christmas season. I love ginger and put it into a lot of my baking; but at Christmas time, you will find everyone thinks this is a flavor that should be in baked goods.

You can make the typical cinnamon roll turn festive with a few simple ingredients...GINGER being the main Christmas theme ingredient! Can I say YUM...these are you can't eat just one cinnamon roll. It will add a new 'twist' to your Christmas breakfast table. :)

I took this recipe from the cookbook Sensible Cooking* and then adapted it with a few spices...ginger and cinnamon adding molasses. You will find that most ginger recipes have molasses in the baked good as well.

Ginger Cinnamon Rolls
8 cups whole hard white wheat
2 tsp ground ginger
1 1/2 tsp cinnamon
1 cup warm milk
1/2 cup honey
1/4 cup molasses
1 cup butter room temperature
7 large eggs room temperature
4 Tbs SAF Yeast

Filling:
1/4-1/2 melted butter
1 1/2 tsp ground ginger
2 tsp cinnamon
1 cup raw sugar

Step One:
In your Bosch mixer, mix warm milk, yeast, honey, molasses, room 1 cup of temperature butter and room temperature eggs. Add dry ingredients and knead 6 minutes.

Step Two:
Roll out dough on greased surface in a 1/4" thick rectangle. Spread butter over entire surface. Sprinkle with the sugar filling mixture.

The pizza roller works wonderfully in making the dough into a rectangle.

Spread with melted butter.

Sprinkle the raw sugar, ginger and cinnamon mixture,

Use dental floss to cut your cinnamon rolls. Works like a charm everytime!!

Step Three:
Let rise and bake 350 degrees 25 minutes or until golden brown.
Drizzle with icing (1 cup powder sugar, 1 tsp vanilla, 1 Tbls maple syrup and water to make the powder sugar drizzle.)

Fix yourself a nice cup of coffee. These ginger cinnamon rolls are great for dunking! I think I indulged a little too much...you think? :)

Something else you can do with this creation is simply making it into a jelly roll. I rolled this and put it in a bread pan to rise. It makes a beautiful presentation and is still as good as the individual cinnamon rolls!

*Please note I can adjust the shipping on small items on my web site as I can ship via USPS. :) Simply email or call me to check on shipping.

Apple Scones Perfect for Fall!

For the first time, our apple trees have really produced enough to do multiple baked items with. I love scones. What better way to find yet another use for our apple crop than scones! These Apple Scones were the perfect fit and a great fall type breakfast or dessert. Eating an Apple Scone just fits on a fall day with a nice cup of coffee. :)

Apple Scones
1 medium apple (finely chopped)
1/3 cup butter
3 cups whole wheat flour
1 tsp baking powder
1 tsp cinnamon
1/3 cup raw sugar
1 egg beaten
2/3 cup milk, plus 2 Tbs for glazing

Step One:
Heat the chopped apple and 2 Tbs butter in a sauce pan till apples tender.

Step Two:
Use your Bosch whips to cut remaining butter into whole wheat flour, 1/2 tsp cinnamon, and sugar. Add cooked apples and egg to flour mixture. Slowly stir in milk till makes a soft dough. A side note: This is another reason I love my Bosch Universal Mixer. It is my servant for the kitchen. I no longer take time to cut butter into flour but let my Bosch Mixer do the job! Use your Bosch Mixer to the max. Let it be your work horse for your baking and cooking job.

Step Three:
Flour counter and roll dough out to 1" thick. Cut with biscuit cutter. Brush with milk and sprinkle cinnamon/sugar over each Apple Scone. Bake on greased stainless steel cookie sheet at `350 degrees for 12-15 minutes or until golden brown.

Homemade English Muffins

This fits the bill for fast and easy AND tastes GREAT!!  It was funny the curious stares my kids gave me as I made them English Muffins.  First, we are not a rice cake or English muffin type family.  I seldom buy this type bread nor do we get it when out at a restaurant.

I made my homemade whole wheat bread recipe as usual; but this time I patted the dough into small balls and pressed them in cornmeal.  This began to draw my kids to me in the kitchen.  When I pulled out the skillet, it really drew their attention.  Telling them I was making English Muffins brought quizzical looks like....what's that?  looks strange...don't think I will eat any!

Well, I was not deterred.  I made them and told them they had to at least TRY them!  English Muffins made; English Muffins disappeared!  They loved them; I loved them.  Now for the real question, do I want keep making them to supply these hollow-legged kids?  Can I afford the temptations in making them as I want to keep eating them?!  Makes me think I should just put them on my hips and forget the eating process.  I guess you get the point...THESE TASTE GREAT and they are way EASY to make!

Without further ramblings....

Whole Wheat HOMEMADE English Muffins
Basic Bread Recipe

Step One:
Pinch off small balls of dough (about the size of large golf balls).  Flatten the dough ball and press onto cornmeal*

Step Two:
Spray your skillet well with Vegaline Spray. Set your heat on medium heat.

Step Three:
Cook about 6 minutes on each side of the bread or until brown.

Cool. Cut them and enjoy!!

*I used the L'Equip NutriMill Grain Grinder to grind my popcorn to make fresh cornmeal to press onto my bread dough. This really sets your English Muffins apart!

L'Equip NutriMill Grain Grinder. This will grind all your grains (Popcorn for Cornmeal) and beans. It is a wonderful kitchen tool which will make all your baked goods taste better!

Fresh popcorn turned into cornmeal!!  You will be so surprised how much better your cornbread or anything you use cornmeal will taste simply because you used fresh corn flour!

Cream Cheese Spread for your Homemade Bagels!!

I love bagels!! I love the special cream cheese spread that I get at Panera Bread. The problem is there is not enough cream cheese spread to go around for our family and I can't bring myself to buy multiple tubs of the cream cheese spread. The next best thing? Make my own!! Here are my creations of cream cheese spreads. My kids like the walnut and honey spread the best. I liked the onion and chive spread for a lunch meal. They all tasted great.

The best is putting it on your homemade whole wheat bagels and there is less guilt in downing multiple bagels!! :) Check out how to make your own homemade whole wheat bagels below!!

Walnut and Honey Cream Cheese Spread
8 oz. cream cheese
2 Tbs honey
1 tsp vanilla extract
1/8 tsp cinnamon
3 Tbs crushed walnuts
Puree in your Bosch Food Processor

Strawberry Cream Cheese Spread

Apple & Date Bars

Have you ever wanted to have a healthy alternative to give your kids...yourself? This apple & date bar fits that niche! When we buy the granola bars at the store, though convenient, we are buying processed foods. These processed foods are the culprits to building allergies and poor health in general. True grabbing a granola bar is a healthier choice than a candy bar but....

This home made granola bar is not only healthy BUT SOOOOOO Good! Our problem was limiting ourselves to just one. I think this recipe is going to be a keeper. Enjoy.

1 cup chopped pitted dates
4 Tbs. water
2/3 cup butter
1/3 cup brown sugar
3 Tbs honey
3/4 cup whole wheat flour
3 cups granola
1/3 cup pine nuts
1/3 cup sliced almonds

Step One:
Heat the chopped apple & chopped dates in a sauce pan w/ water till tender. Add butter, sugar and honey. Heat till melted.

All all the other ingredients and mix thoroughly. Press into greased 9 x 13" baking pan.

Cinnamon Knots

These are the easiest desserts...breakfast treat to make.  Just because of the shape, people/your family will be intrigued.  They will be convinced you are a gourmet cook!  Go for it and make them keep believing we are gourmet cooks and keep our little secret of how easy these are to make. :)

You start with your Basic Bread Recipe!

Step one:
Roll out ropes of bread dough about 6 to 7" long and about 1/2" in diameter.  Roll these ropes in melted butter and then a cinnamon/sugar mixture.

Step Two:
Tie the 'rope' once and then stuff it into a greased stainless steel muffin pan.  No need to let it rise but pop it right into your 350 degree oven and bake until golden brown (about 15-20 minutes.)

This is like eating the center of a cinnamon roll with every bite.  My mouth is watering as I type.  I think I will go eat one with my cup of coffee that is calling me....enjoy. :)
