Peaches & Cream Muffins



1 egg
1/2 cup sour cream*
1/4 cup oil
1 1/2 cup whole wheat pastry flour
3/4 cup honey
2 tsp baking powder
1/2 tsp salt
1 cup chopped fresh peaches

Combine beaten egg, sour cream, honey and oil & set aside. Combine pastry flour, baking powder and salt. Stir the dry ingredients with the liquid mixture until moistened. Fold in chopped peaches.


 
Place in greased stainless steel muffin pan. Bake 400 degrees for 20-25 minutes or until golden brown.

You can use milk instead of sour cream. :) You can also sprinkle raw sugar on the muffins before they bake to give them a glitter look!
