Tacos with a Flair!!

When hearing the word taco, you probably think:  plain meal...way too simple...don't insult my intelligence... everyone knows how to make a taco.  Well, hold those judgments till you try this taco variety!  My sweet daughter in law made these while we were visiting and they are dynamite!!  Have you ever thought of adding potatoes to your tacos?  This not only stretches the meat BUT it adds a great flavor to the lowly taco.

I always enjoy visiting my daughter in laws as they have such great recipes.  I become the helper in chopping and prep while they create wonderful delectable foods. This meal not only going to meet the need for those tired of rich, holiday foods and the need to fix something easy!!  With that said...onto to a new twist for a taco!!

Tacos with a Fling!
1 peeled potato finely chopped per 1# browned hamburger meat

Boil the finely chopped/cubed potato till tender and add to the browned hamburger meat.  Add taco seasoning with 1/2 cup of water.  Sounds simple enough.

Now for the secret sauce that makes this taco WOW!

Salsa Sauce
4 large green onions finely chopped
1 1/2 tsp lime juice (this keeps the avocado from browning)
2/3 cup sour cream
1 1/2 tsp cilantro paste
1 1/2 parsley paste
1 tsp creole
1/2 tsp garlic
1/8 tsp crushed red pepper
1 avocado smashed
1 cup mild salsa

Place all ingredients in your Bosch Blender.  Mix and it is ready to serve.

Serve the taco meat in a taco shell and top with shredded lettuce, chopped tomatoes, and the awesome Salsa Sauce.

Note from Paula:  I posted previously about these wonderful herb pastes...this is just one such occasions that it came in soooo handy!
