Spiced Coffee Cookies

I think holidays make our creative juices come out.  I love to fix our traditional foods but the holidays make me want to try new recipes.  My hubby loves coffee so I found this cookie that meets his love. 


These turned out really well and it was kind of fun to have a 'healthy' cookie in a roll.   I always see the cookie dough rolls in the store and wish I could have an easy cookie to pull out for the moment.  This roll cookie fit the bill for having a ready made cookie.   I didn't try it but I think this dough could probably freeze for me to pull out when I wanted a spur of the moment cookie like you see in the store.

Spiced Coffee Cookies
2 tsp instant coffee
1 tsp hot water
1/2 cup butter
3/4 cup brown sugar
1 large egg
1/2 tsp vanilla
1 1/2 cup whole wheat pastry flour*
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 cup chocolate decorator bits

Step One:
Dissolve instant coffee in hot water.  Whip butter, brown sugar, egg, vanilla and coffee mixture in your Bosch bowl with gourmet whisks.  The bowl scrapers really come in handy when creaming butter mixture.  Mix in dry ingredients.

Step Two:
Roll dough into long tube 1 1/2" diameter.  Roll in chocolate decorator bits, pressing lightly.  Wrap tightly in plastic wrap.  Refrigerate at least two hours.




Step Three:
Cut roll in 1/4" slices.  Place slices about 1" apart.  Bake 375 degrees for 6-8 minutes.


Makes 4 dozens.

  1. Hi Paula. I have a question: is it ok to just fridge the batter without making the log? and then just do spoonfuls of cookie to cook? Thanks.

  2. The only problem with not putting it in a log form is you won't have the chocolate bits surrounding the cookie. This chocolate crumb ring gives it the ascetic look. Perhaps you could simply make cookie dough balls and roll the whole ball in the crumbed chocolate?! Glad you liked the apple date bars. We love them!
