Cranberry Muffins



Lately, I have featured some fun holiday foods for you to get into the 'mood' as my hubby would say we need for any occasion.  Pumpkin Cinnamon Rolls and Caramelized Butternut Squash, great fall veggie, are just some of the 'get into the mood' foods.  Now,  you need Cranberry Muffins to make the festive holiday 'get in the mood' feel.  The tartness of cranberries and the red color make you want to start singing "Jingle Bells!" 

Okay, true confessions...we are a major Christmas family.  We put up the Christmas tree way before I want to admit to anyone and start playing Christmas music in September.  I guess this is all about 'getting in the mood.'  By the time Christmas comes we are more than in the mood and to the point of obnoxious.  I will try to curb my blog to not overwhelm you with my Christmas enthusiasm. :)

Onto the recipe....

Cranberry Muffins
2 cups soft pastry flour
2 tsp baking powder
1/4 cup oil
1/2 cup honey
1/2-3/4 cup milk
1 egg
1 tsp lemon zest
1 good squeeze from the lemon for some added lemon juice
1 cup chopped fresh cranberries

Mix all ingredients.  Add cranberries.  Bake 375 degrees for 25-30 minutes or until golden brown.

Note from Paula:  The lemon really adds a 'zest' to this muffin.  Cranberries are tart by themselves so the lemon sort of offsets the cranberries tartness.  Hope you enjoy these as much as we do!
