A Major Chocolate Attack Met!

I have mentioned that I have an aversion for chocolate and we have been eating lots of healthy things and suddenly the whole family said, "We need something chocolate!"  We pulled out our cookbook dedicated to only chocolate delicacies, "Hershey Recipe Collection" cookbook.  We tweaked it to make it a little more healthy but kept the chocolate levels high.  Yum!!

Even with my love for chocolate, this was a little over the top with chocolate dessert.  You definitely want to grab a glass of milk to wash the chocolate down.  Without further ramblings, onto the chocolate dessert.

Peanut Butter Polka Dot Bars
from Hershey's Recipe Collection cookbook
3/4 butter softened
3/4 cup creamy peanut butter
2 cups packed brown sugar
2 eggs
1 tsp vanilla extract
2 1/2 cups rolled oats
2 1/2 cup soft wheat flour
1 tsp baking soda
1/2 tsp salt

Chocolate Filling:
1 1/2 cups Reese's mini pieces (we used M&M's)
1 stick of butter
2/3 cup Hershey's Cocoa
1/3 cup raw sugar
1 1/2 tsp vanilla
1 can sweetened condensed milk

Step one: Beat butter, peanut butter and brown sugar in your Bosch mixer till well blended.  Add eggs, vanilla and mix well.

Step Two: In separate bowl, add oats, soft wheat flour, baking soda, and salt.  Gradually add the dry mixture to the butter mixture.  Dough will be thick!  Remove 2 cups of dough and set aside.  Press dough into 9x13 baking pan.

Step Three: Prepare Chocolate Filling (instructions below).  Spread the chocolate filling evenly over the dough.  Sprinkle candy pieces evenly over filling.  Crumble reserved dough evenly over the filling.

Step Four:  Bake at 350 degrees for 25 minutes or until top is golden brown.  Cool completely in pan.  Cut into cookie bars.

Chocolate Filling Instruction:
Melt 1 stick of butter in saucepan over low heat.  Stir in 2/3 cup Hershey cocoa and 1/3 cup raw sugar.  Add 1 can sweetened condensed milk; cook, stirring constantly, until smooth and thick.  Remove from heat and stir in 1 1/2 tsp vanilla
