Chocky Road Cookies

My daughter found this recipe in "The Golden Book of Cookies."  I guess we couldn't resist making more desserts.  We love cookies; we love chocolate!  This fit the bill for both of our loves. :)

These cookies are more cake like and fluffy.  We loved them!!  I am a chewy cookie lover but these really are good.  My kids wanted a big glass of milk with them but I went for my coffee.

Chocky Road Cookies

1 cup butter softened
1 cup packed brown sugar
2 eggs
2 1/2 cup soft wheat flour*
1/2 cup unsweetened cocoa powder
1/2 cup buttermilk
1 cup white chocolate chips
1 cup semisweet chocolate chips

In your Bosch Universal mixer, cream butter and sugar.  The Bosch bowl scrapers are wonderful to use with your Bosch mixer! (Click here) Add the eggs one at a time and cream.   Gradually add pastry flour (aka: soft wheat) and cocoa powder alternating with buttermilk.  Stir in chocolate chips and mix well.

Drop tablespoons of cookie batter on greased stainless steel cookie sheet.

Bake 10-12 minutes.  Let cool on cookie sheet for 5 minutes then transfer to cooling rack.

Makes 36 cookies...I think!  We ate them too fast to count! :)

*We love to use the L'Equip Flour Sifter, an attachment for the Bosch Universal Mixer.  This wonderful flour sifter will take the bran out of the flour.  You will still have fresh, nutritious flour minus the bran.  This Bosch flour sifter makes a cake flour type consistency and will make a light wonderful whole wheat cookie!
