Blackberry Peach Pie

This was a fun pie to make because we picked the wild blackberries in our field and I got the peaches fresh from Livesay Orchards in Porter, OK.  The kids thought it was great fun getting to eat the fruit from their 'labor.'  I guess it really was labor as they got into chiggers and itched for days on end.  I am ready for another blackberry pie but haven't convinced them to brave the field with the chiggers.
Even the grandkids got into the action.  However, they ate more than they picked!

So now to the wonderful Blackberry Peach Pie

Bosch Food Processor Pie dough made in 3 minutes (Click here)
Put crust in stainless steel pie pan and bake 450 degrees for 10 minutes or until golden brown.


Blackberry/Peach Pie Filling:
5 medium peaches
1 cup raw sugar
5 tsp fresh lemon juice*
1/4 cup cornstarch
1/3 cup water
3 heaping cups fresh blackberries


In sauce pan, whisk cornstarch and water until smooth.  Stir in peaches and bring to a boil for 1 minute or until thickened.  Remove from heat and cool.  Fold in blackberries and spoon filling into baked pie dough.  Refrigerate at least 4 hours or overnight.


*The Bosch Citrus Juicer is wonderful for making easy fresh squeezed lemon juice.  Let your Bosch Universal Mixer do your work and you won't waste any juice!  The Bosch mixer will remove all the juice within seconds, leaving you with only the lemon shell.  Wonderful Bosch accessory!



Note from Paula:  My hubby who is not a fruit pie lover, loved this one!  I had to make him taste it as he told me he DOESN'T like fruit pies.  One bite and hubby said, "Mmm, this is really good.  I want a whole piece!"  This is a must pie to make this summer with all the fresh blackberries and peaches available.
