Chocolate Cobbler


Chocolate Cobbler
found on Pinterest by my daughter...yum!!

1 cup pastry flour sifted*
2 tps baking powder
¼ tps salt
7  tbs cocoa powder, divided
1 ¼ cup raw sugar, divided
½ cup whole milk
⅓ cup melted butter
1 ½ teaspoon vanilla extract
½ cup light brown sugar, packed
1-½ cup hot tap water
Preheat oven to 350 degrees.
Stir together the flour, baking powder, salt, 3 tablespoons of the cocoa, and 3/4 cup raw sugar. Reserve the remaining cocoa and sugar.

Stir in the milk, melted butter, and vanilla to the flour mixture. Mix until smooth.

Pour the mixture into an ungreased 8-inch stainless steel cake pan. (I love my stainless steel bakeware)

In a separate small bowl, mix the remaining raw sugar (1/2 cup), the brown sugar, and remaining 4 tablespoons of cocoa. Sprinkle this mixture evenly over the batter.

Pour the hot tap water over all. Do not stir!

Bake at 350 degrees; about 40 minutes or until the center is set.

Let stand for a few minutes. Serve with homemade ice cream using the hot gooey chocolate pudding/cobbler sauce to spoon over all.  So were the adjectives enough to help you get the picture of how good this chocolate cobbler really is?  It is like eating a hot fudge sundae only you have more texture to savor the moments of chocolate and ice cream.  Like major YUM!!!  Are you shocked when I tell you that there were no leftovers? :)

*I used the whole wheat pastry wheat also called soft wheat for this wonderful recipe.  We sifted the bran out with the L'Equip flour sifter for your Bosch Universal Mixer.  I LOVE this accessory for the Bosch Universal Mixer.  It makes a cake flour consistency with your whole wheat flour.  The baked goods you get from this wonderful sifted whole wheat flour are out of this world.  Click here to see more!
