Gingerpuff Cookies

Before I even start in telling you about this wonderful, soft, delicious cookie which is one of my vices...Ginger anything....I want you to notice how unusual the Bosch Universal Mixer looks in this picture! You see I have told you all that I bought my first Bosch Universal Mixer in 1984 and that I still use it. Here it is in action making one of my favorite types of cookies (Gingerbread cookies.) It is still running and doing well. The other great thing about the Bosch is that it is not obsolete! You see all the new attachments that were not even designed nor thought of like the Bosch bowl scraper fit my 1984 Bosch Universal! How cool is that? My 'old' Bosch is not only still kicking but all the new stuff fits it!! Notice I put the 'old' in quotes. If it is too old, then I am old! I don't want to label the Bosch as old and yellow because that is putting age on me too! lol You will love the Bosch just like I do! It is truly your Bosch power tool for the kitchen!

Now, onto Gingerbread Cookies...Gingerbread Puff Cookies that is!

From "Delicious Meets Nutritious" an excellent Xagave Cookbook (click here to learn more!)

Ingredients:
2 1/4 cups whole wheat pastry flour (Click Here)
1 tsp baking soda
2 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
1 1/2 stick butter melted
2/3 cup Xagave (click here)
1/4 cup molasses
1 large egg

Mix flour, baking soda, ginger, cinnamon and cloves in a large bowl. In your Bosch mixing bowl with your bowl scraper (click here) whisk butter, Xagave, molasses and egg. Combine flour mixture and butter mixture mixing till creamy. Cover and chill for at least one hour.

Spoon by tablespoon-size balls on lightly greased (stainless steel!) cookie sheet about 2"-3" apart. Bake 325 degrees for 12 minutes. Let cool 2-3 minutes and move to cooling racks.

Note from Paula: The flour sifter is a WONDERFUL accessory for your Bosch mixer. You will have lighter and fluffier cookies by sifting out the brand with the L'Equip flour sifter!! (Click here to learn more!)
