St. Patrick's Day Popcorn!
This is a simple caramel popcorn that using green dye makes it perfect to celebrate St. Patrick's Day. I made this a couple of days early because it holds well. We are planning on a family night watching an old movie and eating this fun green popcorn in honor of St. Patrick's Day. :)
4 quarts popped popcorn*
1 cup Xagave (click here)
1/2 cup light corn syrup
1 tsp white vinegar
1/4 tsp salt
1 stick butter
8-10 drops green food coloring
Put popped popcorn in roasting pan and keep warm at 250 degrees in oven. In saucepan, heat Xagave, corn syrup, vinegar, salt stirring over medium heat till mixture boils. Needs to get to 260 degrees (check with candy thermometer)
Remove from heat; stir in and melt butter. Stir in food coloring. Drizzle over war popcorn and toss to coat. Keep in airtight container.
*I used more than 4 quarts of popped popcorn as I don't like the popcorn super sugar coated.
Note from Paula: The original recipe called fro 1 cup white sugar and 1/2 brown sugar. I substituted Xagave. It will not harden as well as the sugars but gives the same affect. I did use the corn syrup as I needed the hardening affect from the corn syrup.
