Bow Tie Mac n Cheese



This is a great, nutritional Mac n Cheese! It has unusual cheeses that would make you think it wouldn't taste good, but don't let that fool you. My kids went back for seconds and thirds! I love using different shaped pasta as it makes the meal more appealing and different.

I could make the pasta but there are some things I just want easy. I did use multi-grain pasta. So here goes for another great main dish that you can whip up to feed your brood. We love it!

Mac n' Cheese Bow Ties
1 large can whole tomatoes
2 package (16 oz.) whole grain bow tie pasta
1 stick butter
1/2 cup white wheat flour (Click here)
1/2 tsp. salt
3 cups milk
3 cups shredded mozzarella cheese
1 1/3 grated Romano Cheese
3/4 cup shredded Parmesan Cheese
1/2 cup crumbled blue cheese

Step One: Drain tomatoes, saving tomato juice and set aside. Cook pasta according to package direction.

Step Two: Cream sauce: melt butter. Stir in the flour, salt until smooth. Gradually add milk and tomato juice. Bring to boil and stir for 2 minutes or until thickened. Remove from heat.





Step Three: Combine pasta with cream sauce and add tomatoes. Stir in all the cheeses. Mix gently. Put in greased stainless steel lasagna pan (click here for the perfect pan!)





Bake 350 degrees for 30 minutes or until golden brown.

Note from Paula: I love using the large lasagna pan because we can have leftovers for lunch or the next night's dinner. Yum!

Another tip: Don't be intimidated by the blue cheese. Blue cheese actually complements tomatoes! You will love the flavors together. I have another recipe I will be sharing in another post with grilled tomatoes and blue cheese. You are going to love it!
