Strawberries Galore!



True to my love of strawberries, I have more strawberry tips and a wonderful Strawberry Cream Scone.

I want to make the most of the strawberry season so here is yet another delectable delight to use fresh strawberries. You can use any dried type fruit (dried cranberries, apricots or blueberries, raisins, etc.) This heavenly creamed scone is great especially with a great cup of coffee...okay, another vice of mine is out! :)

Cream "Strawberry" Scone
given to me by a dear friend

2 cups pastry whole wheat pastry flour
1 T baking powder
1/2 tsp salt
1/4 cup sugar (can substitute with Xagave)
1 1/4 cup heavy cream
3/4 cup dried fruit (I used fresh chopped strawberries)

Glaze:
3 T butter, melted
2 T sugar

Preheat oven to 425. UN-greased baking sheet. Combine all dry ingredients. Mix with fork. (add dried fruit now, if you are adding)

Stir in the cream and mix until the dough holds together in a rough mass...it will be quite sticky.

Lightly flour a board and transfer the dough. Knead the dough about 8 or 9 times. Pat into a 10" circle and use the biscuit cutter to form round scones. Bake for about 15 minutes or until golden brown.











A great Strawberry Tip!!

Do you hate hulling the strawberry stems? Get your drinking straw out and drive it through the strawberries. Start at the tip of the strawberry and drive the straw through the stem. The stem pops right off! See the pics on the step by step. So easy and give a great food presentation.
