Corn Chowder Soup
So this is a new creation simply because we had way too much corn left over from another meal! What do you do with a 10# can of corn that no one wanted to eat. I decided to create my own soup and the family loved it!
Here we go with my use of leftovers!
1 stick butter melted
1 cup whole wheat flour
1 cup corn flour
3 cups milk
4 cups chicken broth
3 cooked/shredded chicken breast*
3 cups corn kernels
3 cups shredded cheese
1 small onion chopped
Saute onions in the butter. Add the whole wheat flour and corn flour. Then, add all the other ingredients. Need to stir occasionally to keep the cheese, meat and corn from settling to the bottom of the pan.
After the soup had simmered, I added one cup of cold water mixed with flour to thicken the soup.
*Be sure to use your Bosch mixer and the whips to to quickly shred your hot cooked chicken breasts.
This was such an easy meal and helps to use leftovers quickly.
