Pear Salad

Ingredients:
1 head leaf lettuce, torn into bite-size pieces
3 pears (peeled, cored and chopped)
5 ounces blue cheese, crumbled
1 avocado (peeled, pitted, and diced)
1/2 cup thinly sliced green onions
1/4 cup raw sugar
1/2 cup pecans
1/3 cup olive oil
3 Tbls red wine vinegar
1 1/2 tsp raw sugar
1 1/2 tsp prepared mustard
1 clove garlic chopped
1/2 tsp salt
fresh black pepper to taste

Directions:
In a skillet over medium heat, stir 1/4 cup of raw sugar together with the pecans. Continue stirring gently until raw sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces.
 
 
 
The dressing:
Blend oil, vinegar, 1 1/2 teaspoons raw sugar, mustard, chopped garlic, salt, and pepper.

In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve.  Serves 6.
 
 
 
Note from Paula:  The beauty of getting to see this recipe in action is that you get to know if it is worth trying the recipe in the first place.  You know how you flip through your cookbooks or you happened to see it in a cooking magazine, you wonder, is it really good?  Well, this is a GOOD salad!  It took a little more prep than I like for my 'easy' motto in cooking due to the glazing pecans and the multiple ingredients.  However, this was a really good salad and worth the effort...well worth the effort for a special occasions if you are a "fast and easy" cook like me! :)  Enjoy.
