Barley Biscuits
from Natural Nine Cookbook
3 cups barley flour
1/2 tsp salt
3/4 tsp baking soda
1 1/8 tsp cream of tartar
4 Tbs butter (softened)
1 cup buttermilk
Combine dry ingredients in your Bosch mixer. Add butter and mix till mixture has a cornmeal texture. Stir in buttermilk to form a soft dough. Roll out on barley floured counter to 1/2 " thickness.
Bake 375 degrees for 5 minutes or until lightly brown.
Makes 1 dozen
Note from Paula: These don't rise well but do meet the need to be completely gluten free. You can change the flour to 2 cups whole wheat flour and 1 cup barley. Unfortunately, the biscuits will no longer be gluten-free. The whole wheat flour adds spring to the biscuits.
Barley is not a gluten free grain....
