Gluten FREE Chocolate Cake

It is a hard thing to face when you are thrown into the gluten free world. Foods can be so tasteless and you feel like you will always be eating cardboard from now on. There is hope with this cookbook. Our family is not gluten free so it was with much trepidation that I first attempted trying the recipes. I was convinced they really couldn't be that good and it was all hype telling me/us that this gluten food taste good. Well....I was in for a great surprise!! The recipes REALLY are good. Of course, I had to make the chocolate cake recipe. To all of our surprise it was great and the kids were asking for more...I couldn't quit nibbling bites off the cake. I mean, it is really good!

So with no further a due...bake a chocolate cake today! :)

1 3/4 cup GF Flour (see mix below)
1/2 tsp xanthan gum
2 cups raw sugar
3/4 cup cocoa
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
2 eggs
1 cup sour cream
1/2 cup oil
2 tsp vanilla
1 cup boiling water

Combine dry ingredients in a medium bowl. In your Bosch bowl, beat eggs well. Add sour cream, oil and vanilla to the eggs. Beat in dry ingredients. Slowly add boiling water. Mix well. Pour into greased pan dusted with the GF flour.

Bake a 9x13 pan for 35-40 min.

6 cups rice flour
2 cups potato starch flour (not potato flour)
1 cup tapioca starch
