Homemade Ice Cream Sandwiches!!



Yum...I remember as a kid eating those luscious ice cream sandwiches...wonderful vanilla ice cream in the middle with the chocolate wafer type cookie on the outside. In fact, we went to a Blue Bell Ice Cream factory in TX and saw them being made in an assembly line. Pretty cool to watch the process of over-sized sandwiches flying down the conveyor belt. This large ice cream sandwich was cut into individual sizes and then boxed all by machines. Made my mouth water wanting to take a bite!

Okay, I have digressed. Onto how to make your own ice cream sandwich and have it be a little healthier? Can ice cream ever really be on the healthy side? lol

We made large chocolate chip cookies (you can substitute any type of cookie for the 'sandwich') The next step is to spread ice cream in your stainless steel jelly roll pan and let it freeze hard in the pan. Use the biscuit cutter (click here) to cut the cookie then use the same size biscuit cutter to cut the harden ice cream. Don't take the biscuit cutter off the ice cream as you use your spatula to lift the ice cream off the pan. This keeps it from slipping off the spatula! Slide the ice cream onto an upside down cookie, then place another cookie right side up on the top of the ice cream. Place your 'sandwiches' on a cookie sheet to refreeze. When hardened, you can individually wrap each sandwich. They are heavenly. We used several biscuit cutter sizes just for fun.



Don't throw away your cookie crumb scraps. We blended with our bosch dough hooks the cookie crumb scraps into the ice cream and made a fabulous cookie dough ice cream.

  1. OOh love the cookie cutting ice cream concoction!!!If you are in the mood for a slightly healthier version, try VitaTops instead of cookies. They are 100 calorie muffin tops packed with vitamins, protein and fiber...and come in Deep Chocolate!! Just a suggestion, thanks for the recipe!

  2. Great idea! Thanks for another way to make a scrumptious dessert. Yours sounds like it would be a little healthier than ours. :) Our 'sandwiches' didn't last long as we all devoured them in minutes. So yummy and fun twist to a wonderful dessert. Enjoy!
