Blueberry-Cranberry Granola Bar Muffins

Wet Ingredients:
1 cup Xagave (click here)
3 eggs
1 cup plain yogurt
2 T canola oil
2 tsp vanilla
1 tsp almond
Dry Ingredients:
1 cup whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups rolled oats
Fruit & Nuts:
1 cup blueberries
1/2 cup dried cranberries
1/2 cup chopped nuts (almonds, pecans, or walnuts)
Mix the wet ingredients in a bowl. Mix dry ingredients (except oats) in a separate bowl. Add dry ingredients to wet ingredients. Mix well. Add oats, one cup at a time. Fold in blueberries & cranberries.
Bake 325 degrees for 23-28 min.
Can substitute "Fruit & Nuts" with dried apricots & pecans or carrots, pineapple & shredded coconut!
Note from Paula: This is a good for you yummy muffin! My kids gobble them up! They are a filling breakfast muffin or perfect afternoon snack. They are really easy to make and you can freeze them and then have a quick breakfast ready to go!
