Shamrock Pie


This is such a fun dessert. True food coloring is not a healthy choice, but I look at the fun of the holiday. If we used food coloring every day, I think it would be a big issue. To do it occasionally, makes a holiday a fun thing to look forward to because you have shook things up. It keeps life interesting. So why am I talking about food coloring when we are dealing with pie? This pie without the food coloring is a Lemon Pie! This is a pie recipe to keep on file when you want to make a simple lemon pie.

Notice I said, simple? Yes, this pie recipe fits my recipe file because it was very easy to make and tastes great. Well...not all my family thought it tasted great. We have some definite lemon haters in our home. Even the lemon haters tasted the lemon pie. They did admit it tasted great for a lemon pie but didn't ask for a whole piece of pie. :)

Shamrock Pie
1 cup sugar
1/4 cup cornstarch
1 1/2 cups water
3 egg yolks (lightly beaten)
1/4 cup lemon juice
1 Tbs. butter
1 1/2 tsp grated lemon peel
5-6 drops green food coloring
1 pastry shell (9" baked)*

Meringue:
3 egg whites
1/3 cup sugar

Step One:
Combine sugar, cornstarch and water in saucepan; stir until smooth. Bring to a boil, stirring constantly. Boil 2 min. or until thick.


Step Two:
Add a small amount to egg yolks and return to the sauce pan. Cook and stir 1 min. Remove from heat and add lemon juice, butter, lemon peel and food coloring stirring till smooth


Step Three:
Pour into baked crust.


Meringue:
Beat egg whites on high with your Bosch gourmet whips. Slowly add the sugar and beat till stiff peaks formed. This will be fast with your Bosch Universal Mixer!


Spread meringue over the hot filling. Be sure to seal well. Bake 350 degrees for 10-15 min. or until lightly brown. Cool and refrigerate
