Sweet Potato & Pumpkin Pie



Our family loves the traditional pumpkin pie and I love sweet potatoes!!  This is the best of both worlds.  I had some extra sweet potatoes from our dinner the other night.  I decided to treat my kids to a pumpkin pie but add my love for sweet potatoes to the mix.  This is a really good pumpkin/sweet potato pie!  You won't even know that you have put sweet potatoes into the pie.  The sweet potato makes the pie a thicker consistency so will hold up together better than the average pumpkin pie which is like a custard consistency.  Hope you enjoy your pie as much as we enjoyed ours.  It is really good to dollop a heaping spoon of whipping cream...Yum!



Sweet Potato & Pumpkin Pie
1 can pumpkin
1 cup mashed sweet potato 

1/2 cup Xagave
1 1/2 tsp cinnamon
1/2 tsp salt & ground ginger
1/4 tsp ground clover
3 eggs beaten
1 1/4 cup Half & Half
5 oz. evaporated milk

Step One:
Whip first eight ingredients in your Bosch Mixer.  Add the eggs, half & half, milk.   Pour into pie shell

Step Two:
Bake 375 degrees for 40 minutes or until golden brown.
