Mint Stuffed Chocolate Chip Cookies

I never realize how many desserts we eat till I scroll through my blog and definitely see a lop-sided trend.  Lots of desserts, very few main dishes, sparse veggies....hum?  Does our family have a sweet tooth?  I think so.  Here is yet another sweet tooth dream that really can be made in to numerous fillings to accommodate your vice.  I will note the different fillings later.  To stay on track with the mint theme...here we go:



First, make the Chocolate Chip Cookie recipe:

Chocolate Chip Cookies
2 sticks soft butter
3/4 cup raw sugar
3/4 cup brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
3 cups soft wheat pasty flour
1 teaspoon baking soda
3/4 teaspoon salt
12 ounce bag chocolate chips
12 ounce bag of York Peppermint Patties

I really think a basic cookie dough recipe would do nicely with the mint chocolates.  I am thinking peppermint cookies for Christmas!  Maybe that will be a future post to drool over. :)

Step One: Spread 1/2 the cookie dough into a 9"x13" pan.  Be sure to line your pan with foil.  This will keep the stuffed cookie from sticking but also from burning on the bottom.


Step Two: Line the cookie dough with mint patties*.


Step Three: Spread the rest of the cookie dough on top of the mint patties.


Bake 350 for 25-35 minutes.  Let cool for at least an hour to let the cookie dough set up.  Patience is key and so hard to do with this delicious cookie.  Cut into squares....have a glass of milk or a cup of coffee ready as they melt in your mouth.


*Note from Paula: We made the same recipe only used Reece's Peanut butter cups as our 'filling'....next, Caramel Rollo...you get the picture!  Your favorite chocolate type candy makes a wonderful, gooey filling for this delectable chocolate chip cookie.  Yum!  If you notice from the pic of the peppermints being spread on the cookie dough it appears another chocolate is there.  You are right!  We did half with peppermint patties and half with Reece's Peanut Butter cups as some of our family loves mint while others are peanut butter fanatics! It worked beautifully.
