A Pumpkin For Dessert!



So we had a Thanksgiving dinner to go to and we found this design for a dessert and thought it very appropriate for this holiday dinner. The recipe suggested using a boxed cake but really you can use any cake recipe or better yet pumpkin bread! Pumpkin bread with the cream cheese icing is wonderful!! Have you ever had the pumpkin jelly roll dessert. This is the same idea of a pumpkin type bread with a cream cheese icing. Hum...perhaps I will make this to show you all. Of course, my motivation will be in total nobility to help you. We will then indulge on the wonderful dessert knowing our sacrifice in eating was simply to make it to show you all.

If you need a pumpkin bread recipe, here is one I make that is delicious and low in sugar pumpkin bread! Can't beat that for a great dessert.

So here are the steps to make this fun dessert....

Bake the cake or pumpkin bread in a bundt pan.

Make the cream cheese icing.
1 package (8 oz.) cream cheese softened
1 stick of butter softened
4 cups powder sugar (okay so not so healthy!)
1 comet ice cream cone
orange food coloring; green food coloring

Set aside 1/2 cup of the icing to make it green.
If you don't have orange, this is an excellent time to teach kids how primary colors make new colors. For those challenged to remember: red and yellow make orange; green is usually already made in the food coloring kits.

Cover the 'pumpkin' with your orange icing. Try to make strokes that go from the center to the outside. This will make it look like the grain of the pumpkin.



Pipe green lines to make the divided parts on the pumpkin.



Ice the icecream cone with the extra green icing
