Healthy Chicken Alfredo!



Here is an easy main dish that makes you think that you are at Olive Garden...okay maybe I am a little prejudice but it really does taste great! :) My next post will show how to make the bread sticks to go with your Chicken Alfredo!

4-5 boneless/skinless chicken breast
26 oz fettuccine pasta
salt and pepper to taste

Cream sauce:
4 cups 1/2 n 1/2
1 1/2 cup Parmesan cheese
1 stick butter
1 cup whole wheat flour
1 tsp salt

Boil fettuccine pasta according to package directions.

Chicken Preparation:
Cut the raw chicken strips. Salt and pepper lightly. Braise/cook chicken in 4 Tbls. butter till a golden crust coats the chicken. The chicken will cook fairly fast. Just make sure your chicken is cooked through.







Cream Sauce Preparation:
Melt butter. Add flour and whisk vigorously. Add 1/2 n 1/2 milk. When the cream sauce begins to thicken add the Parmesan cheese.




Pour the cream sauce over the drained fettuccine noodles and mix well. Place on serving dish and place several chicken strips on top of the noodles. It is soooo good and really easy to make! So surprise your family and make them feel like their at Olive Garden for dinner!
