Roasted Cabbage



Wow! Have you ever thought of such a thing? My daughter in law in honor of St. Patrick's Day made a cabbage side dish for us. I have always heard of boiling or stewing cabbage but never roasting. What a treat. The cabbage had a sweet flavor and the olive oil and garlic made for a fantastic vegetable. In fact, you can roast most vegetables for a great flavor.

Ingredients:
One head of cabbage (cut into wedges)
Olive oil
Salt and pepper
garlic powder
lemon pepper

Toss the cabbage wedges in the oil/pepper mixture. Roast on a cookie sheet for 400 degrees for 40-45 minutes.

To make this a beautiful presentation, we used the outside of the cabbage leaf. We added 1 tsp. of pizza/pasta mix per 1 cup of cottage cheese! Then, we used an ice cream scoop to put the cottage cheese mixture and a cabbage wedge in the cabbage leaf. What a beautiful presentation of such a simple veggie!

Note from Paula: If you cut the cabbage wedges thinner, the cabbage center will cook faster. Thicker wedges will take longer making the outside brown too fast. You can cover the cabbage (or other veggies) toward the end of the cooking time to keep it from browning too much. We made larger wedges because we wanted larger pieces for our meal.
