Secret to Fluffy Pancakes

Have you ever wished you could recreate an IHOP pancake? Really it is easy. We love breakfast meals at our home and are known for having a 'breakfast' dinner. With so many children, we really pile on the pancakes and they down them all.

So what is the secret? Beat your eggs and the other liquids before you add your dry ingredients. :) I have done it both ways with the same recipe. Both ways meaning, I simply dumped all the ingredients in at the same time. The pancakes tasted fine but were not fluffy. When I take the time to beat the eggs with the other liquids and then add the dry ingredients, the results are amazing.

Here is a pancake recipe that we have tweaked:

Dry ingredients:
4 cup whole wheat flour
8 tsp. baking powder
1 tsp. salt
1 Tbs. cinnamon

Wet ingredients:

4 eggs (beaten)
4 cups milk
1 tsp. vanilla extract
1 tsp almond extract

Cook on a hot griddle and serve! Close your eyes and you might think you are at IHOP! :)

  2. You are welcome! I think the vanilla and cinnamon add a great flavor to the pancake. When you beat the liquids first then add the dry ingredients you will see a world of difference for a fluffy pancake. Enjoy
