Amaranth Nut Bread

6 cups hot water
1 cup apple juice concentrate
1 cup oil
1 cup honey
6 cups fresh whole white wheat (click here)
3 cups rolled oats
3 cups amaranth flour
3 cups chopped nuts (walnut, pecans, sunflower seeds)
2 Tbs. salt
2 Tbs. dough enhancer (click here)
1/3 cup gluten flour (click here)
5-6 SAF yeast (click here)
8-10 cups additional whole white wheat (click here)
1. In Bosch bowl add all ingredients, with yeast on top, except last amount of flour. Pulse, until flour is completely moistened. Turn off and sponge for 15-20 minutes.
2. Turn machine back on speed 1 while adding additional flour, until dough cleans the side of the bowl. Turn machine to speed 2 and knead for 3-5 minutes.
3. Shape dough into 6 equal pieces. Put in greased bread pan and let rise till doubled. Bake 350 degrees for 30-35 min.
Makes 6 loaves.
Note from Paula: This is a really heavy bread dough to mix! The Bosch mixer is really the only mixer I would recommend making this bread. This is the beauty of the Bosch Universal Mixer because its 800 watt motor has no trouble with this heavy dough or for that matter any heavy dough. The Bosch can need 25 pounds of dough at a time!! Humm....do I sound like I love my bosch? :)
