Apple Cranberry Crisp



I know you must be thinking, "do they ever look at a cookbook?" In one of our snowy days that we were cooped in the house, my daughter in law decided to make an apple crisp. She is loves to throw things together and try new things in baked dessert. She decided to add cranberries to the apple crisp. It was great! Be adventurous and try some dried cranberries in recipes.

Apple Filling:
12-14 fresh tart medium apples (cut and peel)*
1 small lemon
1/4 cup raw sugar
2 Tbs whole wheat flour
1 cup dried cranberries
2 tsp. cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
pinch of salt

Topping:
1 cup whole wheat flour
3/4 cup oats
1 1/2 cup brown sugar
juice from 1/2 the lemon
1 tsp cinnamon
1 cup butter cubed
Mix until coarse crumbs. Sprinkle over the top of apple filling

Bake 45 min. at 375 degrees. Cover with foil if starts to get brown before the time is finished.

*You can use 4 apple pie filling but the fresh apples really have a nicer flavor
