Peanutbutter for Breakfast?


Peanut butter Chocolate Chip pancakes!

My darling daughter loves to cook and create so this pancake recipe credit goes to her. The Sutton clan is known for their love of peanut butter and adding peanut butter to all kinds of foods. I am not quite the peanut butter lover so these pancakes were a little over the top for me BUT the rest of the family loved them. :)

4 cups whole soft wheat ground flour (click here)
1 tsp salt
8 tsp. baking powder
4 eggs
1/3 cup oil
1/3 cup honey or Xagave
1/3 cup sour cream
2/3 cup creamy peanut butter
2 tsp almond extract
1 T Hershey chocolate syrup
1 cup half n half cream
3 cups milk
1 cup mini chocolate chips (optional)

Mix all the ingredients and make some protein packed pancakes.

Note from Paula: Peanut butter facts. Most peanut butters on the shelf have hydrogenated vegetable oil which are high in trans-fats. This is what we shouldn't be eating as the trans-fats are what clog our arteries and can lead to coronary heart disease. The oils are added to make the peanut butter easier to spread. The best peanut butter to use/eat is natural peanut butter. It doesn't spread as easily and you do have to stir it to mix the natural oil into the peanut butter BUT is is so much better for you. :)
