Cheesecake with the Dough!



Here is a twist to your cheesecake recipe. We are on a roll with chocolate chip cookies as you can see from my recent post of chocolate chip ice cream sandwiches. Our family is known as a peanut butter fan and chocolate anything! So without further a due, here is a fabulous cheese cake recipe using chocolate chip cookie dough. Need I say?...YUM!!

First the crust....Did you know you can make fast graham cracker crust using your Bosch food processor OR the slicer shredder? After you have made your own crust, you will never want to go back to the pre-made graham cracker crusts in the store.

Simply put the graham crackers in your food processor (bottom blade) or slicer/shredder (fine shredding disk) This will puree the graham crackers into instant fine crumbs. Now, pour your softened butter into your food processor (same bottom blade) OR slicer/shredder (use the small whisk). I usually add honey to the mixture as my sweetener. Most recipes call for sugar but I avoid sugar. :)

22-24 square graham crackers*
1/3 cup honey
1/4 to 1/3 cup butter softened

*you could also use vanilla wafer or chocolate oreos (need 1 2/3 cup of crumbs) for the crust









Now for the fun part...the filling!!

2 pkgs. cream cheese softened
1/2 cup raw sugar (can use Xagave)
1/2 t vanilla
2 eggs
3/4 cup prepared chocolate chip cookie dough

Beat cream cheese, sugar and vanilla in Bosch mixer speed 2 until well blended. Add eggs; mix just until blended. Remove 1/2 cup of dough and drop in batter stirring gently. Pour into crust. Top with level teaspoonfuls of the remaining 1/4 cup cookie dough.

Bake 40 min. in 350 degree oven. Refrigerate. Makes 12 servings.
