Easy Bean & Rice Soup
Another twist to the common grain grain: rice. The soup is a real meal stretcher for your family. This is a home-made concoction I made up to stretch our meals. The great thing about beans and rice mixed is that it makes them a complete protein. To only use beans and rice, it would be rather dull, so I spice up the concoction with spices from my pantry.
4 cups cooked beans*
4 cups cooked brown rice**
2# cooked ground beef
2 cans stewed tomatoes (don't drain)
1 T garlic powder
3 T Chili powder
1 T salt
Heat, Mix and serve!
*can use black beans
**can use wild rice or short grain rice
You can also throw in cayenne pepper, if you like it hot. Increase the chili powder or garlic if my proportions aren't enough flavor to your liking. The point is that the beans, rice, meat and tomatoes are the base and the you add flavoring to your personal tastes. So easy to make. Enjoy
This is a very inexpensive meal and great balance of protein! You can throw in barley or millet to enhance other grains in your diet.
