1# cooked black beans
4 cups cooked brown rice
3 green onions (diced)
2 tomatoes (diced)
1/2# shredded cheese
2 avocados (cut in small pieces )*
salt (to taste)
lime (cut in half, then thinly sliced)
Place layer of rice on soft tortilla. Then layer beans, cheese, tomatoes, avocado and onion. Sprinkle with salt and a twist of lime. Top off with sour cream. Wrap tortilla.
*I like to mash the avocado and spread it evenly over the wrap.
One of my favorite restaurants is Chipotle which specializes in wraps. Now you can make your own. Mixing the rice and beans makes this a complete protein. This is a yummy meal.
On a side note, you can make this become a giant wrap adding corn, salsa, hot peppers, or even add shredded beef or chicken.
