Kamut Basic Bread

7 cups hot water
1 cup oil
1 cup honey
1 cup dry powdered milk *
9 cups freshly milled kamut flour
3 cups rolled oats
2 T salt
2 T dough enhancer
1/3 cup vital wheat gluten
5-6 T SAF Yeast
8-10 cups additional kamut flour

1. In Bosch bowl, add all the ingredients with yeast on top, except last amount of flour. Pulse, until flour is completely moistened. Turn off and sponge for 15-20 minutes.

2. Turn Bosch machine back on to speed 1 while adding addition Kamut flour, until dough cleans the sides of the bowl. Turn to speed 2 and knead 3-5 minutes.

3. Shape dough into 6 equal balls of dough and place in greased bread pan. Let rise till doubled.

4. Bake at 350 for 30-35 minutes.

*I used tofu white instead of milk. click here for milk substitute

Note from Paula: This bread has a great flavor. I think the oats added a sweetness to the bread that you will enjoy. This is an excellent way to add new grains to your diet without having to do a lot of extra work!
