Ginger Bread with Kamut!!


As I have told you before, I love ginger anything!! My darling cook decided to treat me again with more ginger bread only using Kamut flour.

Remember adding other grains to your diet helps to not build allergies to any one grain. Kamut is one grain you could use it as the only flour because it has enough gluten to rise as a bread.

1 cup molasses
1 cup sugar*
1 cup butter, melted
1 cup boiling water
1 tsp. baking soda
1 cup whole wheat flour
1 cup kamut flour
3 tsp ginger
4 tsp. cinnamon
1 tsp. ground cloves
1 tsp. allspice

Mix all the ingredients in your Bosch Universal Mixer. Bake 350 for about 40-45 minutes in greased 9x13 pan.

*We used raw sugar but you can substitute 1/2 xagave in place of the sugar.

Another note, we used a dark molasses which made the ginger bread cake very dark in color. It was so good...in fact too good, as I ate most of it! The pic doesn't do it justice for the wonderful taste. We got it out of the oven too soon and it sunk in the middle. Guess this will give all a vote of confidence in their cooking abilities to see our blooper! :)
