Sesame Quinoa Crackers

1 cup quinoa flour
3 tsp sesame seeds
1/2 tp salt
1/2 cup water
1 cup spelt flour
1 tsp baking powder
4 Tb sesame or garlic oil
For top of crackers:
2 tsp soy sauce
2 tsp. sesame or garlic oil
Place ingredients in Bosch bowl. Using Bosch cookie paddles, whisk until well mixed. Let rest for 10 minutes. Roll out cracker dough to 1/16" thickness on a large, oiled cookie sheet (or use parchment paper). Cut into 1 1/2" strips. Cut strips on the diagonal to create diamond-shaped crackers. Cookie cutters can also be used to cut shapes!
Combine soy sauce and sesame or garlic oil. Brush on top of crackers. Bake 400 degrees for 5-7 minutes. Cool on rack.
Note from Paula: I used olive oil as opposed to sesame oil just because I already had it on the shelf. It worked! I didn't roll the dough out thin enough which is very important in having a crisp cracker. The finished product pic doesn't do them justice. The crackers are/were great! I sprinkled sesame seeds on them before they baked to give them an added taste/look.
Also note the dough appears to not be much. It really does make a lot of crackers. you will be rolling it out very thin and the dough will go a long way.
