Healthy Super Bowl Food!
This is a perfect finger food for a Super Bowl party OR just to have as a side dish for a Mexican meal. My kids love them and pop them in their mouths way too fast! They were gone in a flash but oh so good.
Mexican Chili Biscuit!
Biscuit Dough (see below)
Chili (I used can chili but this will work well with homemade chili)
Shredded cheddar cheese
sour cream
Simply press biscuit dough onto your greased muffin pan. Dab 1 teaspoon chili into the biscuit dough. Bake 20 minutes or until golden brown. Sprinkle with cheddar cheese and a dab of sour cream.
Serve...eat/devour!
Basic Biscuit Recipe:
2 cups whole wheat pastry flour (I used the L'Equip flour sifter to make great flour!)
4 tsp baking powder
1/2 tsp soda
3/4 tsp. salt
4 Tbs. butter
1 cup milk
Mix dry ingredients. Cut butter into flour mixture. Slowly add milk till dough forms.

Note from Paula: The bite size are a great appetizer. However, I made larger ones to show you how to make it more of a meal plan type food. So good either way.

Do you think I could put these together on Saturday and bake them on Sunday without any problems?
ReplyDeleteThis wouldn't work as the chili would soak into the biscuit dough. However, here is another option to have the ingredients ready for a fast appetizer: use the refrigerator biscuit dough recipe!
