Wrap up Dessert!



In my last e-newsletter, I introduced the Grand Wrap Chef Pro Tortilla maker.(click here for more info) It is fun to use and very user friendly.

So how does this fit in with dessert? Enclosed with the tortilla maker is a small recipe booklet. They happened to have a dessert tortilla which we 'forced' ourselves to make. Can I say...YUM! :) We filled this wonderful homemade sweet tortilla with an apple filling. This fits right in with the October theme of using apples which are now in season to make a luscious, fun dessert.

First the tortilla....

Basic Flour Tortillas from Chef Pro Recipe booklet
2 cups soft pastry flour ground
1/2 tp salt
1/4 cup canola oil
2/3 cup warm water

Mix*. Divide dough into 12 to 15 equal pieces, roll into balls, cover with plastic wrap and let rest at least 30 minutes before baking.

Sweet Tortilla: Add 2 Tb sugar and 1/2 tp cinnamon to flour. Serve with fruit and powder sugar, top with honey and serve warm or serve with ice cream and your favorite topping. Crisp fry your sweet tortilla for a special touch.

*Two types of mixing venues:
Food processor: place flour and salt in food processor bowl. Add oil and process for about 3 seconds. With machine running, pour water through feeding tube in a steady stream. Let Bosch run until dough forms a ball. Dough should be a medium-stiff consistency. If dough is too stiff add a little water. Divide dough into 12 to 15 equal pieces, roll into balls, cover with plastic wrap and let rest at least 30 minutes before baking.


Hand mixing: ruby flour, salt and oil together with your fingers until completely incorporated and fine crumbs form. Pour water into dry ingredients and immediately work it in with a fork. Dough will be in large clumps. Sprinkle with flour and knead until smooth for about 2 minutes. Divide dough into 12 to 15 equal pieces, roll into balls, cover with plastic wrap and let rest at least 30 minutes before baking. I let my bosch mixer do this with the dough hook. No hand mixing with this gal! :)









Now the filling....

I used an apple pie filling for ease BUT you can also peel/slice/core apples. In sauce pan, add a little water and cook the apples till tender. Add corn starch to thicken the apple juice and add honey or xagave to sweeten. I also add cinnamon.

Fill your tortilla. Consume with great delight! Enjoy.



Proceed to eat and enjoy your dessert in a wrap!
