"Steamed Millet"


This recipe was taken from Natural Meals in Minutes

1 cup millet
2 1/4 cups water *
1 teaspoon olive oil or butter
1/4 teaspoon salt

Rinse millet and drain in a strainer. Place in a saucepan, add remaining ingredients and bring to a boil. Reduce heat, cover and simmer for about 20 minutes or until all water has been absorbed. Turn off heat and let stand, covered for 5 minutes. Fluff millet with fork and serve. Makes approximately 4 cups.

* Variation: Use vegetable or chicken stock instead of water and serve as a side dish.

Note from Paula: We have made this for breakfast and added maple syrup and butter. Just as you would 'doctor' your oatmeal, you can doctor you millet and have a great hot cereal! It is rather sticky but a nice change from your typical hot cereal. This is a great way to add a different grain to your diet.
