Cooking with Barley Flour


Using Barley in your bread products!

Remember you should only use 1/3 barley flour WITH 2/3 whole wheat flour. The gluten content in barley is not high enough to use more barley flour in a bread recipe. The wheat flour will help your barley bread rise. I would also recommend adding vital gluten and dough enhancer to help the elasticity of your bread. Happy baking. :)

Whole Grain Barley Bread


Barley Recipes
Barley/Whole Wheat Bread!
by Sensible Cooking Cookbook
5 cups warm water
1/2 tsp vitamin C crystals*
1/3 cup oil
2 Tbsp sugar (can use 2 Tbsp. Xagave)
3 cups barley flour
3 cups white wheat flour
2 Tbsp SAF yeast
5-6 cups unbleached flour**
1 Tbsp salt***

Put first 6 ingredients in Bosch Universal bowl with dough hook. Pulse "M" (momentary) switch to moisten. Add SAF yeast and salt and knead for 4 minutes to develop gluten. Add remaining white flour until sides of bowl are clean and continue to knead 4-5 minutes. Let rise 30 minutes. Punch down. Form into 4 loaves and let rise in greased loaf pans until double.

Bake 350 degrees for 30 minutes.

*I used 1 Tbsp dough enhancer
**I used whole white wheat instead of unbleached flour.
***I like using 2 Tbsp salt instead of 1 Tbsp.

Life can be Humorous

I have included on my blog roll leannsgarden blog. She is a dear friend who has a way of adding to life's serious moments a humorous tilt on 'paper'.

She also has a series on the wayward child, which I would encourage you to read whether or not you have experienced a wayward child. She has put into words the feelings that the parent goes through with a prodigal child and great advice on how to handle the pain and maybe curb the downward spiral that prodigal child is determined to follow. Sadly, Christians are notorious for shooting their wounded. Leanne's blog gives some fresh perspective and advise encouraging believers walking this trial of fire; and to help believers walk with their fellow Christians without judgment. Be encouraged, you are not alone, if you are in this trial.

Bosch Oatmeal Honey Raisin Bread

Bosch Oatmeal Honey Raisin Bread

7 cups hot water
1 cup oil and 1 cup honey
8 cups freshly milled white spring wheat flour
4 cups rolled oats OR freshly milled oat flour
4 Tbs. ground cinnamon
2 Tbs. salt
2 Tbs. dough enhancer
1/3 cup vital wheat gluten
5-6 Tbs. SAF yeast
8-10 cups additional white spring wheat flour

In Bosch blender, add 3 cups hot water and 2.5 cups raisins. Let soak for 5-10 minutes, then pulse so they are just chopped and not pureed. Pour into Bosch mixing bowl and add 4 more cups of hot water.
Add the rest of the ingredients, with yeast on top, except last amount of flour. Pulse, until flour is completely moistened. Turn off and sponge (rest dough) for 15-20 minutes.
Turn machine back on to speed 1 while adding additional flour, until the dough cleans the side of the bowl. Turn to speed 2 and knead for 3-5 minutes.
Grease hands and divide the dough into 6 equal loaves. Place in greased loaf pan and let double in size. Bake 350 degrees for 30-35 minutes.
Yield 6 loaves!!

Mission Opportunity!

Just to give you a glimpse at one of my passions, it would be missions. I have been helping a particular mission in Honduras for quite some time. The mission director and his wife are normal every day people just like us. Their story is incredible on how God got them to Honduras and how God has miraculously provided for them and built the ministry that even the lost of Honduras are saying this must be God. May His praises ring loud throughout the land.

I would encourage you to visit their web site (gatheringhearts.org) periodically as there are always mission impossibles being made possible only by God. It is an exciting story to see unfold before your eyes. The whole ministry is supported by donors who feel led by God to give. Join the story and be a part of Honduras!

Apple Cinnamon Steel Cut Oats!

Apple Cinnamon Steel Cut Oats! by "Delicious Meets Nutritious" Xagave Cookbook
1 cup steel cut oats 4 cups water 1/2 tsp. salt (optional) 1 tsp. vanilla 1 tsp. cinnamon 4 tbls. Xagave 1/2 cup of apple chunks or grated apple Put all ingredients except apples into a pot. Bring to a boil, reduce heat and simmer for 15 to 20 minutes of cooking. Add apples last 5 minutes of cooking time. Pour into bowl and top with Xagave or Xagave Maple Syrup. Add nuts and milk to taste.
