Homemade Tortillas...Helpful Hints
I have posted about the making your own tortillas before but thought I would give you another recipe, since so many have purchase the electric tortilla maker. Here are some added helpful hints on making great tortillas. (click here for info about the electric tortilla maker!)
Flour Tortillas
2 cups whole wheat flour*
1/2 tsp. salt
1/4 cup oil
2/3 cup warm water.
*We like to use the Bosch Flour sifter to make a lighter flour when making our tortillas. You will love this Bosch Universal Plus attachment to make your baking light and fluffy while still keeping nutrition in your freshly ground flour.
Hints for tortilla making:
1. Add 2 to 3 Tbs. water , in small amounts, in addition to amount called for in recipe. This helps to make a smoother dough and a lighter tortilla. Keeping the dough moist will make better tortillas. Because dough dries out quickly, it is important it covered in a container even while baking. You might even need to add small amounts of water during the baking process to keep the dough pliable.
2. After mixing the dough, it must rest for at least 30 minutes to 2 hours before baking. This helps it become pliable. You can keep it room temperature for several hours or refrigerate as long as 36 hours by greasing surface of dough and covering it tightly with plastic wrap.
3. Leaving the tortilla on the baking surface too long makes them dry and not puff out. If you over bake them, they become crisp.
