Reeces Chocolate Cupcake...brownie
So how do I define this delectable dessert? Is is a brownie? Well yes, it does tastes like a Reese's pieces brownie. Could it be a cupcake? Well yes, it does have a cake texture too! I think I would define this dessert as simply divine and leave it at that. We made a double batch and all was gone in minutes. So is it worth it to even try to make this dessert...YES!! Maybe you should hide some of them for you to eat later as the kids will eat all they see. :)
Fudgey Peanut Butter Chip Muffins
adapted from "Hershey's Recipe Collection" cookbook
1/2 cup applesauce
1/2 cup rolled oats
1/4 stick softened butter
1/2 cup raw sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
3/4 cup pastry flour (sifted*)
1/4 cup Hershey cocoa
1/2 tsp baking soda
1/4 tsp cinnamon
1 cup Reese's peanut butter chips
Line muffin pan with paper bake cups. Stir together applesauce and oats; set aside. Mix butter, raw sugar, brown sugar, egg and vanilla in Bosch mixer (speed 1). Add applesauce mixture and mix well. Combine dry ingredients and then add to butter mixture.
Fill muffins 1/2 full. Bake 20-25 min. at 350 degrees. Makes 12 muffins/brownies!
These are best served warm....I mean they are to die for served warm. :)
The stainless steel muffin pans are wonderful addition to your kitchen bakeware!

*I used the L'Equip Flour sifter that is a wonderful accessory for the Bosch Universal Plus mixer. We used 100% soft pastry flour and sifted out the brand. We saved the bran for other recipes (bran muffins, bran pancakes, dressing for breads, etc.) (Click here to learn more about the L'Equip Bosch Flour Sifter!)
Yum, yum, yum! I've been on the lookout for more muffin recipes. My husband takes them to work for breakfast and I need to add to the variety. Thanks Paula!
